2 cups brown sugar
1 cup margarine
2 large eggs
4 teaspoons vanilla -- divided
2 1/2 cups all-purpose flour
1 teaspoon salt
3 cups quick cooking oatmeal
12 ounces chocolate chips
1 can sweetened condensed milk
1 cup nuts -- chopped
Cream margarine and sugar. Mix in eggs and 2 teaspoons vanilla. Stir together the dry ingredients and mix with the oatmeal. Combine all with the margarine and sugar. Spread 2/3 of this mixture in a 15 x 10 x 1 inch jelly roll pan.
Prepare filling by melting over a double boiler the chocolate chips, eagle brand milk, and salt. When completely melted, add the nuts and the other 2 teaspoons vanilla. Cover the oatmeal layer already in the pan with the chocolate filing. With the remaining oatmeal batter, dot it evenly over the chocolate layer. Bake at 350° for 25 to 30 minutes. Cut into squares when cool.
NOTES : These are wonderful. They are easy to prepare and they make a lot of cookies.
