15 ounces black eyed peas -- drained
1 cup frozen corn
1 medium red pepper -- finely chopped
4 green onions -- finely chopped
2 tablespoons cider vinegar
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/2 teaspoon cumin
1/8 teaspoon red pepper
Combine all ingredients and refrigerate. Serve with tortilla chips as an appetizer, or use as a salad.
