Chinese Vermicelli Salad

This is really hot and spicy - a favorite of my husband's

1/4 cup sesame oil
1/2 cup soy sauce
2 tablespoons sugar
2 Tablespoons hot chili oil
2 tablespoons balsamic vinegar
1 1/2 pounds vermicelli
1/2 cup sesame seeds
1 cup green onions -- sliced on diagonal
1 cup Cashews

Mix first 5 ingredients together and set aside. Cook vermicelli until al dente. Rinse thoroughly in cold water. Drain and add sesame oil mixture. Toss to coat. Add sesame seeds and green onions.

Can be served cold or at room temperature.


NOTES : This is great as a salad or side dish. Can be made ahead and would be wonderful with shredded chicken in it.
