1 teaspoon Dijon mustard
1/3 cup apricot nectar
1/3 cup red wine vinegar
1/3 cup canola oil -- or good olive oil
2 tablespoons sugar
salt and pepper -- to taste
In a blender or food processor, mix together mustard, apricot nectar, red wine vinegar, sugar and salt and pepper. While machine is running, slowly add oil. Serve on top of Susan's Special Salad
