Chewy Ginger Cookies

I just made these cookies and they are wonderful.


1 1/2 cups shortening
2 cups sugar
2 Large Eggs
1/2 cup molasses
2 teaspoons vanilla
4 cups flour
2 teaspoons cinnamon
2 teaspoons ginger
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cloves

Combine dry ingredients and set aside. In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, molasses and vanilla; mix well. Add dry ingredients to creamed mixture and mix well. Roll into 1 inch balls and roll in additional sugar (I like to use raw sugar as it shows up better and looks more professional). Bake at 375° for 10 minutes. Cool on a wire rack/

NOTE: These freeze really well. I love the recipe because they mix up really nice, hold their shape and are delicious.
