Coconut Peaks

1/2 cup butter
6 cups coconut
3 cups powdered sugar
1/2 cup cream
12 ounces semisweet chocolate chips

Heat butter in cream until melted. Mix in sugar, then coconut. Chill the mixture for about an hour or two. Before completely chilled drop mixture by teaspoon onto waxed paper, shaping each into a peak. Return to refrigerator or freezer to chill thoroughly. When peaks are solid to the touch, they are sufficiently chilled.

Melt chocolate in a double boiler. Dip the bottom of each peak into chocolate. Set peaks back onto waxed paper and CHILL


NOTES : These candies are very rich, but soooo good!
