2 cups cooked turkey -- diced
2 cups prepared dressing
2 large eggs
garlic powder
1 can cream of chicken or celery soup
all-purpose flour
Canola oil for deep frying
Mix your leftover turkey and dressing together with the eggs, soup, and garlic. (You want this mixture to be extremely moist, if your dressing is on the dry side, you might want to add another can of soup or some chicken broth). Form the mixture into bundles or egg shapes and place on a cookie sheet. Cover and refrigerate overnight or at least several hours. When ready to cook, heat oil in a deep fryer or a large skillet. Roll bundles in flour and deep-fry until browned, turning once.
Note: The quantities are basic. Just use equal parts of turkey and dressing and use soup to make it moist. You can make how much you want. Serve with mashed potatoes and gravy - your family will thank you all night!
NOTES : This recipe is great for leftovers. We like it so well, I cook a turkey and make stuffing just to have the leftovers so I can prepare this. Mixture needs to be moist when the bundles are deep fried. They're crisp on the outside and moist on the inside. I form the bundles ahead of time and freeze them for deep frying and eating later. This recipe is a "10".
